      CHICKEN CAPSICUM STEW,G/G FRIED RICE . 9/2/O9.

      GINGER/GARLIC FRIED RICE.

      ING:
      Rice / 1/2 kg,soaked and boiled till 2 kanni's are left.
      Ginger/garlic / 1/2 pao,koot lein.
      Eggs / 3 nos,whisked.
      Hari mirchein / 4-5 nos,diagonally chopped.
      Kali mirch / 1/2 tsp.
      Sugar / 1/2 tsp.
      Salt / to taste.
      Oil / 1/4 cup.

      METHOD:
      -Pan main oil garam ker ke ginger/garlic ko golden fry karein.

      -Hari mirchein add karein aur saath hee eggs add ker ke mix karein.

      -Boiled rice add karein aur salt kali mirch.sugar add ker ke aachi tarhan mix karein.

      -Slow flame per 6=7 mins tak cover ker ke dum dein.

      -Rice ready hai,serve karein,tomato aur salad kileaves ki garnishes ke saath.

      MAYO GARLIC SAUCE.

      ING:
      Garlic / 3-4 cloves,chopped finely with the help of back of the knife.
      Milk /Pani /3-4 tbsp.
      Mayyonaise / 1/2 cup.
      Salt / 1/4 tsp.
      Kutti kali mirch / 2 pinch.
      Lemon juice / of 1/2

      METHOD:
      -Bowl main garlic add karein,milk/pani, mayonaise dalein,salt,kali mirch dal ker whisk
      karein,lemon juice add karein aur aachi tarhan whisk karein.

      -Dripping consistency honi chahyee.

      -Ready hai.
      (AGAR MILK ADD KARNA HAI TU LEMON JUICE ADD NAHI KERNA WARNA DRESSING CURDLED HO JAE GEE)

      gingr+garlic psate:2 tbsp
      capsicum:2(small cube shape main cut kr len)
      onion:1 (thick slice)
      green chilli:4-5(ek ki 2 kr len)
      turmeric:1 tsp
      crush red chilli:1 tbsp
      garam masala:1 tsp
      salt:to taste
      oil:1/2 cup
      water:1 cup

      Method:

      ek pan main oil add kr k is main ginger+garlic paste add kr k is ko thora pka len thn is main chicken add kr den or mix kr len thn salt add kr k mix kr k bhoon len thn is main capsicum add kr den or isko tez flame pr mix kr k pka len,onion slice add kre or isko mix kr len thn green chilli add kr k toas kr len,haldi+crush red chilli add kr k achi trha mix kren or is main garam masala add kr k thora bhoon kr is amin water add kr k cover kr den or flame slow kr den.jb pak jai to dish out kr len.

      CHICKEN TERIYAKI AND TEPPANYAKI. 26/1/O9.

      CHICKEN TERIYAKI.

      ING
      Chicken / 2 no,cut in 2 layers.
      Garlic / 2 cloves,chopped then paste it with the help of knife.
      Ketchup / 3 tbsp.
      Soya sauce(kikoman) / 3 tbsp.
      Worcester sauce / 2 tbsp.
      Maida / 1 tbsp.
      Egg / 1/2 whisked.
      Cornflour / 2 tbsp.
      Honey / 3 tbsp.
      Salt / to taste.
      Sugar / 1 tsp.
      Corn flour / 1 tbsp,mixed with little water.
      Kali mirch / 1/2 tsp.
      Oil / for frying n 3 tbsp.

      METHOD:

      -Chicken breast ko bowl main dalein aur salt,kali mirch, egg,maida,cornflour
      dalein aur mix karein.

      -Oil garam karein aur chicken dalein aur deep fry karein,golden ho jae tu nikaal lein.

      -Pan main oil dalein garlic dal ker golden karein,honey add karein aur cook karein.

      -Ketchup,soya sauce add karein aur mix karein,worcester sauce add karein aur
      mix karein,sugar add karein aur mix karein.


      -Pani 1/2 cup add karein aur mix karein,salt,kali mirch add karein aur cook karein.

      -Mixture boil hone laage tu corn flour mila pani add ker ke thick karein.

      -Chicken breast ko diagonally cut karein aur sauce main add karein.

      -Cover ker ke 5-6 min tak dum pe rakhein,ready hai.

      -Platter main dish out karein aur salad leaves ke saath garnish karein.

      -Noodles aur plain rice ke saath serve karein.

      TEPPANYAKI.

      ING:
      Chicken leg piece / 2,debone.
      Carrot / 1 piece,sliced then rough juilliene.
      Cabbage / 1/4 piece,juilliene.
      Capsicum / 1 ,sliced then juilliene.
      Spring onion / 1 ,cut in long juilliene.
      Garlic / 4 cloves,chopped then paste it with the help of knife.
      Soya sauce (kikoman) / 3 tbsp.
      Honey / 2 tbsp.
      Kali mirch / 1/2 tsp.
      Salt / to taste.
      Oil / 2-3 tbsp.
      Tawa big (flat) /1 which we usually used in kata kat.
      Spoons / 2,which we used in kaata kat.

      MEYHOD:

      -Bowl main chicken dalein aur salt/kali mirch/soy sauce aur honey add ker ke mix
      karein.

      -Tawe pe oil dalein aur garam karein,garlic dal ker cook karein,kachapan khatum
      ho jae tu chicken add karein.

      -Flame high ker ke chicken ko cook karein,side change karein aur spoon ki help se
      kaata kat karein.

      -Chicken jase jase tender ho ga,kaata kat easily ho ga,chote pieces hoon jae chicken
      ke.

      -Sari vegetables add karein aur remaining marination (chicken wali),aur 1 pinch
      salt dal ker kaata kat karein.

      -5-6 mins tak kaata kat karein spoons se,is ko dry karna hai,ready hai.

      -Dish out karein aur carrot ki garnish ke saath serve karein.

      IRISH POTATOES AND PEPPER CHICKEN . 19/1/O9.

      IRISH POTATOES.

      ING:
      Aloo / 1/2 kg, boiled.
      Orange segments / of 2.
      Garlic / 4 cloves,chopped.
      Spring onion / 1 no,chopped.
      Hara dhania / 1/4 bunch,chopped.
      Parsley / 1/4 bunch,chopped.
      Salt / to taste.
      Kutti kali mirch / 1 tbsp.
      Oil / 3 tbsp

      METHOD:
      -Pan main oil garam karein,garlic add karein aur golden karein.

      -Spring onion,parsley,hara dhania add karein aur mix karein.

      -Salt aur kali mirch add ker ke mix karein.

      -Orange juice thora add karein aur mix karein,phir aloo dalein aur mix karein.

      -Orange segments add karein aur mix karein,3-4 mins ke liye cover ker dein.

      -Ready hai,dishout karein aur platter main salad leaves se garnish ker ke serve karein.

      PEPPER CHICKEN.

      ING:
      Chicken breast / 2 nos ,if thick then cut in 2 layers.
      Salt / to taste.
      Kali mirch powder / 1/2 tsp.
      Darchinni powder / 1/2 tsp.
      Papita paste / 2 tbsp.
      Lemon juice / of 2.
      Worcester sauce / 2 tbsp.

      -Chicken ko bowl main dalein aur salt,kali mirch powder,darchinni powder add
      ker ke mix karein.

      -Papita paste mix karein,lemon juice add ker ke mix karein,thori deir chor dein.

      - Last main worcester sauce add karein aur mix karein.

      -Pan main 4 tbsp oil dal ker chicken ko shallow fry karein,duno sides pe golden
      colour aa jae tu ready hai,alag nikaal lein.

      FOR SAUCE:

      Onion / 1 med,bareek sliced.
      Oil / 3 tbsp.
      Pani / 2 cups.
      Maida / 4 tbsp,1/2 cup oil dal ker bhoon lein.
      Kutti kali mirch / 1 tsp.
      Salt / as required.
      Cream / 2-3 tbsp.

      METHOD:

      -Pan main oil add karein aur garam karein onion dal ker golden fry karein.

      -Pani add karein aur boil hone dein,phir slowly,slowly maida add karein aur whisk
      karte jaein.
      -Thick hone laage tu cook karein,low flame per.

      -Salt aur kali mirch add karein aur cook karein,bubbling boil hone laage tu
      sauce ready hai.

      -Chicken pieces ko sauce main dalein aur coat karein aur cream add karein aur
      mix karein.

      -6-7 mins ke liye cover karein aur dum de dein,ready hai.

      -Platter main cucumber,salad leaves se garnish karein .

      -Chicken breast ko sauce se nikaal ker paltter main rakhein aur is ke ooper
      sauce pour ker dein.

      -Fresh cream se kahin kahin drops dalein aur knife se design bana dein.

      -Ready to serve,white boiled rice / saute' veggies ya boiled pasta ke saath serve
      karein.

      Butter Paratha/Kata Kat 06/02/09

      Butter Paratha

      Ingredients:

      1 cup lal aata
      1 cup plain flour
      250g white butter
      ghee as required
      salt, water

      Method:

      Butter ko knife sy chote pieces mein break kar leen.[butter melted na ho]

      Lal aata or plain flour mein thora sa salt add Karen. Mix kar k butter b daal den.


      Aab butter ko flour k sath achi tara mix Karen.

      Thora sa pani dalen or ghonden.

      Phir thora sa paani dal k ghonden.

      Dough soft ho hard nhi.

      Dough ko cutting board par shift kar k achi tara dry flour k sath ghond leen. K soft texture ben jae.

      Dough ko 15-20 minutes k ley rakh deen.

      Rote beal k os par butter lagaen or rote ko iss tara turn Karen k wo chokor form mein ben jae.

      Ab iss ko apni merzi sy gool ya chokor beal leen. Recommended chokor.

      Tawa garm kar k os par thora ghee lagaen or paratha daal den.

      Aek side sy pak jae tu turn kar k side or pathe k oper ghee dal k achi tara paka leen.

      Flame medium rakhen.

      Kata Kat

      Ingredients:

      250g dil
      250g gorde
      250g kaleji
      250g brain
      1 onion medium
      2 tomatoes medium
      5 green chilies
      ? bunch fresh coriander
      3tbsp oil
      3 cloves garlic[rough chop]
      1tsp haldi
      1tsp kuti lal mirch
      1tsp garam masala
      1tsp kutta zeera
      125 yogurt
      ghee [quantity missed, 2-3tbsp use kar leen]
      1 medium piece ginger[julian]
      salt

      Method:

      Dil, gurde, kaleji ko medium size mein kaat k wash kar leen.[gurde ko center sy 2 kar k white part nikal deen]

      Onion, tomatos, or green chilies ko slice Karen.

      Tawa normal ya ager bare size ka hai wo use Karen

      Tawa garm kar k os par oil daalen. Garm hojae oil tu dil, gurde or kaleji daal den, thora sa pani b sath add Karen or achi tara mix Karen.

      Ager kata kat wale spoon na hoon tu common cooking spoon use kar leen.[ aj kal market mein wooden flat spoon b milte hain wo b substitute hosakte hain]

      Flam slow rakhen, jab tawe ki heat zera kaem hojae tu aek side par brain whole rakh deen.

      Dil, gurde, kaleji ko oss tim tak cook Karen kata kat style mein jab tak inn ka blood wala panni dry na hojae.

      Jab paani dry hojae tu onion, tomatoes, green chili, hara dhaniya add kar k mix, phir garlic or ginger b add kar deen. Teka tek teka tek teka tek iss ko shor karte hove benaye k vegetables or dil etc mix or chote size mein hojae. [iss dermiyan mein brain ki side change kar k os ko paka leen]

      3-4 minz badh haldi, kuti lal mirch, garam masala, kutta zeera add kar k kata kat mix.

      Sath sath break b karte jaen sub koch.

      5 minz bath salt or yogurt add.

      Jab yogurt ka pani dry hojae tu ghee add. Mix teka tek.

      Now brain ko break kar k mixture mein add kar k mix. Teka tek teka tek zoor zoor sy.
      Last mein hara dhaniya sy garnish.

      Serve Karen chapatti ya kulcha k sath.

      Cheese Fried Chicken. Fig Pudding. 23rd March
      Cheese Fried Chicken

      Ingredients:

      1 whole chicken
      2tbsp ginger, garlic paste
      1tbsp crushed black pepper
      1tbsp black pepper powder
      2tbsp garlic paste
      6 egg white
      6 cheese slices
      2tbsp plain flour
      2tbsp corn flour
      3-4tbsp oil
      salt to taste
      bread crumbs as required

      Method:

      Divide chicken in 4 or 8 pieces. You can also use drum sticks.
      Heat oil, add ginger, garlic paste and chicken in oil, and mix well. Add salt and crush black pepper. Cook on high flame and cover. After 5 minutes uncover and dry water. Don’t over cook chicken.

      Beat egg white, include ginger paste, salt lil, black pepper powder, cheese slices Julian+ chop, mix all, now add corn flour and plain flour, mix. This will be in creamy paste.

      Now dip chicken in the batter, coat in bread crumbs, and press with hands to stick bread crumbs on chicken and deep fry till golden. Don’t fry them black. 10:16 am (7 hours ago)

      Fig Pudding
      Ingredients:

      300g fig
      ? liter fresh cream
      1 cup sugar
      6 egg yolk
      10-12 fresh strawberry
      ? cup melon

      Method:

      Boil fig in water till soft. Drain water of fig but don’t waste water.
      Blend fig with ? cup of water in which boiled fig.
      Take fresh cream in pan, add sugar in it and cook this. It will come in a milk form.
      Beat egg yolk and include them in fresh cream slowly, move spoon. It turns in a thick form.
      Add fig paste in above mixture, strawberry and melon too add, mix and cook lil and dish out.
