      Home Made Masalas (Spices)





      Garam Masala

      Ingredients
      50 grams black cumin
      4 cloves
      6 big cardamoms
      6 small cardamoms
      50 grams black pepper
      ? tsp nutmeg
      ? tsp mace

      Method
      In a grinder, add 50 grams black cumin, 4 cloves, 6 big cardamoms, 6 small cardamoms, 50 grams black pepper, ? tsp nutmeg and ? tsp mace and grind well. Preserve prepared Garam Masala in a jar and use to requirement.

      Biryani Masalas





      Biryani Masala

      Ingredients
      2 bay leaves
      2 tsp white cumin
      6 small cardamoms
      2 big cardamoms
      4 aniseeds
      ? tsp nutmeg
      ? tsp mace
      1 tsp whole black pepper
      ? tsp biryani essence
      ? tsp citric acid
      2 ? tsp red chili powder
      2 tsp coriander powder
      1 tsp turmeric powder
      1 tsp salt
      10 plums

      Method
      Finely crush 2 tsp white cumin, 6 small cardamoms, 2 big cardamoms, 4 aniseeds, ? tsp nutmeg, ? tsp mace and 1 tsp whole black pepper in a grinder. Add grinded spices and ? tsp biryani essence, ? tsp citric acid, 2 ? tsp red chili powder, 2 tsp coriander powder, 1 tsp turmeric powder, 1 tsp salt, 10 plums and 2 bay leaves to a bowl and mix. Leave the bowl uncovered for a day. Then fill the prepared Biryani Masala in a jar. It will be enough for 1 kg biryani.

      Bihar Boti Masala



      Bihar Boti Masala

      Ingredients
      50 grams whole red pepper
      50 grams cumin seeds
      50 grams ground poppy seeds
      1 tsp salt
      1 tbsp kachri powder
      1 tbsp black pepper powder
      1 tbsp ajwain
      1 tbsp hot spices powder
      ? tsp nutmeg, mace

      Method
      Crush 50 grams cumin seeds, 50 grams whole red peppers, 1 tbsp ajwain and ? tsp nutmeg, mace powder. Now mix it with 1 tsp salt, 1 tbsp kachri powder, 1 tbsp black pepper powder, 50 grams ground coconut, 50 grams ground poppy seeds and 1 tbsp hot spices powder. Preserve in a jar and use prepared Bihar Boti Masala for 2 kg meat.

      Bagharay Bengan Masala



      Ingredients
      50 grams poppy seeds
      50 grams sesame seeds
      50 grams peanuts
      25 grams ground coconut
      10 curry leaves
      1 tsp turmeric powder
      1 tsp hot spices powder
      1 tbsp cumin seeds
      2 tsp salt
      2 tsp coriander powder
      2 tsp mustard seeds
      2 tbsp red chili powder

      Method
      On a tawa, stir 50 grams poppy seeds, 50 grams sesame seeds, 50 grams peanuts and 1 tbsp cumin seeds. Finely crush these spices and mix with 25 grams ground coconut, 10 curry leaves, 1 tsp turmeric powder, 1 tsp hot spices powder, 2 tsp salt, 2 tsp coriander powder, 2 tsp mustard seeds and 2 tbsp red chili powder. Fill the spices mix in a jar to preserve. It will be sufficient for 2 kg eggplants.

      Achar Masala




      Ingredients
      50 grams red chili flakes
      1 tbsp salt
      1 tbsp turmeric powder
      1 tbsp coriander seeds
      2 tsp onion seeds
      2 tbsp fennel seeds
      2 tbsp fenugreek seeds
      4 tbsp mustard seeds

      Method
      •Crush together 4 tbsp mustard seeds, 2 tbsp fenugreek seeds, 2 tbsp fennel seeds and 1 tbsp coriander seeds.
      •Mix it with 50 grams red chili flakes, 1 tbsp salt, 1 tbsp turmeric powder and 2 tsp onion seeds.
      •Preserve in a bottle and use for 1 ? to 2 kg Raw Mango Pickles.

      Gulzar special tikka masala



      Gulzar special tikka masala

      Whole red chili 100 grams
      Turmeric powder ? tsp
      Aniseed 1 tsp
      wholecumin 1 tsp
      Cinnamon 2 sticks
      Fennel Seeds 1 tbsp
      Cardamom seeds ? tsp
      Whole black pepper ? tsp
      Nut meg 2 leaves
      Mace ?
      Star anis 1
      Food color ? tsp
      Kabab cheeni ? tsp
      Black salt ? tsp

      Heat oil in a pan add whole red chili , turmeric powder, fennel seed, cinnamon, whole cumin, big cardamom, whole black pepper, oregano and nutmeg, mace, star anees, yellow badyan seeds, star anis, saut? three to four minutes. Now grind the masala together with black salt.

      Dry red chili 50 grams
      Whole Red Chili 2 required
      Whole Coriander 50 gram
      Whole cumin 1 tbsp
      Fennel Seeds 1 tsp
      Cinnamon 2 sticks
      Whole cumin 1 tbsp
      Green Cardamom ? tsp
      Whole black pepper ? tsp
      Mace 2
      Nut Meg 2
      Star anise 1
      Turmeric powder ? tsp
      Bay leaves 3 to 5
      Long 5 to 6

      Heat oil in a pan add whole red chili and dry red chili then another pan add fennel seed, cinnamon stick , whole cumin , Green cardamom, whole black pepper, nutmeg , mace, star anise bay leaves and long , saut? three to four minutes. Now grind the masala together and when it’s ready with the help of sieve add in to bowl and add turmeric powder for color qorma special masala is ready for use.

      Whole cumin 125 grams
      Big cardamom 6 to 8
      Small cardamom 8 to 10
      Cinnamon 4 sticks
      Whole coriander 6 tbsp
      Nutmeg 1
      Mace 1tsp
      Clove 8 to 10
      Star anis 2
      Aniseed 1 tbsp

      Method for making Special masala
      Toast all the spices on a flat pan over medium flame. Finally grind all the masala and use whenever needed.

      Chaat Masala



      Chaat Masala

      Ingredients
      Cumin seeds 1 ? tbsp
      Black pepper 1 ? tbsp
      Cloves 6
      Cardamom 2
      Whole coriander 1 tsp
      Fennel seeds ? tsp
      Ajwain ? tsp
      Coriander seeds 1 tsp
      Red chili powder 1 tsp
      Garlic powder ? tsp
      Pahari namak 1 tbsp
      Samandari namak 1 tsp
      Aamchor 6 tsp
      Asafetida powder a pinch (optional)
      Tarter acid ? tsp

      Method
      Roast all ingredients in a non stick pan on a low flame.
      Continuously stir for 2 to 3 minutes until the spice are fragrant.
      Remove from heat and allow cooling.
      Add the salts and grind all the spices while they are still a bit warm in a coffee grinder. Mix in the remaining ingredient and allow cooling.
      Store in an airtight container

      Nihari masala




      Nihari masala

      Ingredients
      Tartari 1tsp
      Whole red chili 50g
      White cumin 6Tbsp
      Black cumin 2tbsp
      Fennel seeds 2tbsp
      Big cardamoms1tbsp
      Star anise 1tbsp
      Nutmeg 2

      Method:-
      Roast all the ingredients on a flat pan then grind them together in a grinder. The nihari masala is ready to use.
