      Chaat Masala




      Chaat Masala

      Ingredients
      50 grams fennel seeds
      50 grams cumin seeds
      50 grams coriander seeds
      50 grams whole red chilies
      50 grams black salt
      1 tsp citric acid
      1 tbsp ajwain
      1 tbsp black pepper
      ? tsp noshader
      ? tsp heng
      ? tsp mint

      Method
      In a grinder, add 50 grams fennel seeds, 50 grams cumin seeds, 50 grams coriander seeds, 50 grams whole red chilies, 50 grams black salt, 1 tsp citric acid, 1 tbsp ajwain, 1 tbsp black pepper, ? tsp noshader, ? tsp heng and ? tsp mint and mix well. Chaat Masala is ready. Sprinkle on your favorite food to enhance the flavor.

      Korma Masala


      Korma Masala

      Ingredients
      1 bay leaf
      6 cardamoms
      Few drops of kewra essence
      1 tsp cumin seeds
      1 tsp whole black peppers
      1 tsp coriander powder
      ? tsp nutmeg
      ? tsp citric acid
      ? tsp turmeric powder
      ? tsp salt
      2 tbsp ground coconut
      1 ? tsp red chili powder

      Method
      In a grinder, add all the spices and mix. Then fill the mixture in a jar to preserve. The prepared spices mix is sufficient for 1 kg Chicken or Beef Korma Masala.

      Tandoori Chicken Tikka Masala



      Tandoori Chicken Tikka Masala

      Ingredients
      1 tsp ajwain
      1 tsp hot spices powder
      1 tsp salt
      1 tbsp red chili powder
      1 tbsp saut?ed cumin
      1 tbsp saut?ed and crushed cumin
      1 tbsp turnip powder
      ? tsp citric acid

      Method
      •Stir together 1 tsp ajwain, 1 tsp hot spices powder, 1 tbsp red chili powder, 1 tbsp cumin seeds, 1 tbsp ground cumin, 1 tbsp turnip powder and ? tsp citric acid.
      •Crush these spices finely and mix with 1 tsp salt. Tandoori Chicken Tikka Masala is ready.

      Pasanday Masala

      Ingredients
      50 grams cumin seeds
      50 grams grated coconut
      50 grams poppy seeds
      6 cardamoms
      1 tsp turmeric powder
      1 tsp salt
      1 tbsp whole black peppers
      ? tsp nutmeg, mace
      ? tsp citric acid
      2 tbsp red pepper powder

      Method
      On a tawa, stir together 50 grams cumin seeds, 50 grams grated coconut, 50 grams poppy seeds, ? tsp nutmeg and mace, 6 cardamoms and 1 tbsp whole black peppers. Then add 2 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp salt and ? tsp citric acid and mix. Preserve in a jar and use 1 tbsp for ? kg pasanday.

      Nehari Masala



      Nehari Masala

      Ingredients
      4 aniseed
      4 cardamoms
      1 tsp dry ginger
      1 tsp turmeric powder
      1 tsp salt
      ? tsp citric acid
      2 tsp cumin seeds
      ? tsp nutmeg
      ? tsp mace
      2 tsp coriander powder
      2 tsp red chili powder
      2 tsp fennel seeds

      Method
      In a grinder, crush together 4 aniseed, 2 tsp fennel seeds, 1 tsp dry ginger powder, 2 tsp cumin seeds, ? tsp nutmeg, ? tsp mace and 4 cardamoms. Also add 2 tsp red chili together, 1 tsp salt, 2 tsp coriander powder, 1 tsp turmeric powder and ? tsp citric acid and mix. Fill it in a jar to preserve. The prepared Nehari Masala is sufficient for 1 ? kg meat.

      Biryani Masala





      Biryani Masala

      Ingredients
      2 bay leaves
      2 tsp white cumin
      6 small cardamoms
      2 big cardamoms
      4 aniseeds
      ? tsp nutmeg
      ? tsp mace
      1 tsp whole black pepper
      ? tsp biryani essence
      ? tsp citric acid
      2 ? tsp red chili powder
      2 tsp coriander powder
      1 tsp turmeric powder
      1 tsp salt
      10 plums

      Method
      Finely crush 2 tsp white cumin, 6 small cardamoms, 2 big cardamoms, 4 aniseeds, ? tsp nutmeg, ? tsp mace and 1 tsp whole black pepper in a grinder. Add grinded spices and ? tsp biryani essence, ? tsp citric acid, 2 ? tsp red chili powder, 2 tsp coriander powder, 1 tsp turmeric powder, 1 tsp salt, 10 plums and 2 bay leaves to a bowl and mix. Leave the bowl uncovered for a day. Then fill the prepared Biryani Masala in a jar. It will be enough for 1 kg biryani.
